Do you love chocolate....or peanut butter? Let's be honest they are even better together...and if you agree then you must try these.
Chocolate Cupcakes with Peanut Butter Frosting!
Now they take a bit of work but they are sooo worth it.
First you need to get some peanut butter cups. I personally like Reese's Peanut Butter Cups Miniatures. You first have to unwrap them, and make sure to take the paper wrapper off as well. I know what you are thinking....who would leave it on....well you would be surprised....it happens (but not to me of course...lol). Once unwrapped place one in each cupcake liner in the tin.
Then you pour your batter over top, making sure to cover the peanut butter cup. Now I have heard some people put their batter in first, bake it for 5 minutes, and then add the peanut butter cup....however I am all about doing things the easy way so I just start with mine in the liner.
Once all your cups are covered put them in the oven and bake. When done remove them from the oven and cool. Then when ready pipe on your frosting and ENJOY! These go great with a glass of milk!
- 3/4 cup all-purpose flour
- 1/2 cup granulated sugar
- 2 tablespoons cocoa
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup water
- 3 tablespoons vegetable oil
- 1 1/2 teaspoons vinegar
- 1/2 teaspoon vanilla extract
- Line cupcake liners with Reese Peanut Butter Cups
- Preheat oven to 350 degrees F.
- Combine flour, sugar, cocoa, baking soda and salt in small mixer bowl. Add water, oil, vinegar and vanilla extract. Beat 3 minutes. Fill muffin cups until Peanut Butter cup is covered. Bake for 20 to 25 minutes. Cool and frost.
Just make buttercream frosting as you normally would but use half the amount of butter and substitute the other half with Peanut Butter. You want it to be thick, but not too thick that you can't pipe it.
Now to get "fancy" frosting just use a special tip. I like 1M or 2D.
Voila! You are now ready to enjoy these super yummy delicious cupcakes!
